Sugar caramelized browned potatoes is another must on a typical Christmas table. It is fairly simple, but here is the recipe.
1 kg small potatoes, 150 g sugar, 25 g butter and salt.
Some use the same kind of potatoes as for cheese fondue, some use asparagus potatoes, food barbarians use canned potatoes
Boil the potatoes with the peel on in salted water for 18 – 20 minutes.
Let them cool down a bit and remove the peel.
Add the suger on the center of a pan, heat up on the highest or second highest level, when the sugar starts melting add the butter on the top of the sugar. Wait, be patient, until most of the sugar is melted and starts getting a dark brown colour. Add the potatoes and turn them around in the sugar/butter a couple of times. Let it get really warm, stir well again and let it heat up for 3 – 4 minutes. Done! Pour all in a preheated bowl and serve.
